  Dad, Gary and I enjoyed tonight's curry which featured Rocky Ridge Farm's tender bok choy.  Aside from the cleaning of the greens, this was a very quick meal to throw together. This recipe was inspired by the vegan chocolate cake the Smiths enjoyed in a Boone, NC, restaurant.   You tasted the one layer version at Charging Up Hope, but Gary usually makes it as a triple-layer cake.

My dad really enjoys a bowl of dark leafy greens cooked southern style or any other style for that matter.  Gary and I are more in the "how can wide hide the bitterness while still getting the nutrition" category.  This recipe from FatFree Vegan Kitchen suited all of us.

Our neighbor, Mary Coward, served this soup to a gathering of friends and we all asked for seconds!  Mary said this soup was a staple in the Cowards' early married "austerity" years and continues to bring warmth to their family and friends.
