Lemon Olive Oil Cake
Jane brought this cake to a Halloween potluck and everyone - plant eaters and omnivores - said it was delicious. A rare, easy cake recipe that Jane baked a day ahead and it was still most 36 hours later.
The only modification to the recipe from Rainbow Plant Life was that Jane didn't make the strawberry compote. Instead she bought frozen whole strawberries, cut them in bite sized pieces, sprinkled with a bit of cane sugar and some lemon zest, and let them rest in the fridge overnight. One of the guests suggested offering "moonshine cherries" instead which also got good reviews.
